When we lived in Florida, long before Oak Hill was on our radar, one of our favorite pastimes was going out for breakfast on the weekends. One of our preferred haunts was The Original Pancake House. As many South Floridians know, this chain not only offers great pancakes, French toast and the like, but a number of other unique offerings such as their Dutch Baby and Apple Baby pancakes.
Now that breakfast has become an integral part of our everyday lives, we are constantly in search of inspiration for new menu items to serve our guests here at Oak Hill. Although not my usual selection at the Pancake House, I recalled that mouth watering picture up on the wall, and endeavored to emulate it. I have (after numerous attempts) come up with our version of a German Pancake. Ours is made individually in our little cast iron skillets. It's great fun to watch as these pancakes puff up the sides of the skillets, each unique. After they have put on their little show, we remove them from the oven, dust with powdered sugar and fill each with fruit and fresh whipped cream. The fruit filling is seasonal and ranges from strawberries with balsamic vinegar, to peaches or apples. This new offering has been very well received and we hope for the opportunity to serve it to you soon!
